horsepower is work done per time. moving a 33,000 pound weight up 1 ft in 1 minute is one hp.
bringing the dyno up to speed is also work. your engine accelerates the drum of the dyno, with a known mass and a known intertia, to a measured speed in a measured time.

This is quite the setup you describe: three fuels of propane, methanol and nitro- AND a 15 psi turbo? There has to be an easier way to make 600 HP! Is this one of those bait questions to see who falls for it? (if so, you got me!)
How about a 501 chevy crate motor with a WOT nitrous system...
The t/c's I've used for egt over the years have been the common type K's, which I think are good to 2000 F. One tip though, when you're setting up your data display, skip the decimal places, cuz they don't resolve that fine.
