the major thing is cleanabiliy of the pump. That is why you need an "open impeller"(dont know if this is the right english expression). with this solution you also have no problems with blocking. if you are still afraid, use a small filter before the pump to be shure, that the...

the problem with citrujuice is pectin and other biopolymeres, so you have to use a big amount of enzymes. unfortunately the citrus oil will destroy your membran anyway after a longer use.
i don't know any reference.

i want to know, how to calculate the average shear rate in pipe with turbulent flow, or is it allowed to calculate like in laminar flow?
i'm working with juice concentrate.
