I just need 1 psi, a liquid ring vacuum pump can do it and accept carryover.
There is no risk of the skin bursting if the product is not heated first. We usual peel other products at lower steam...
after pumping air, i'll put 15bar of steam in the first vessel. I have enough time, about 50 sec, to empty the buffer tank for vacuum. This is a machine to peel fruit and vegetables. I want to be sure that I don't have air that create a insulating barrier for product.

thanks for help, I supposed to have a vacuum tank of 800 l with 65cmHg pressure. After valve opening, the vacuum in the full system of 800l+400l should be 43cmHg. I used Boyle-Mariotte for this calc.

thanks for the quick response Goutam; i don't understand why i can't provide flow and pressure at the inlet as it is normally done. They should be indipendent parameters, or am I missing something? Maybe you mean velocity+ pressure or velocity+steam flow as the couple of inlet BC?
