I've used measures with good success (Insert>Simulation Measure). The maximum stress measure can be placed over selected geomtery: Edges and Surfaces are most useful.

I assume you mean that the progress bar freezes when creating a mesh? Are you 3D meshing? It might be a good idea to 2D mesh the area first; the 2D meshes do not have to be sent to the solver.
Split face is a fem command.
I usually break up faces in the *i.part typically using split body or sub-divide face. So split face is not a command I use very often, that said it seems to work okay.

I don't think there is anything in Customer Defaults. Have you tried using Templates? These can be customised then dragged and dropped onto the post view.
What version of NX are you running? NX8.5 shows free edges if you use the "Element Edges" command in the Advanced Simulation toolbar; the default highlights these pink. If you are meshing onto geometry the blue lines could be geometry edges rather than shell edges.
Fully agree with previous posts, I would not touch tet4s under any circumstances.
It takes a bit of time to prepare geometry but it's worth doing in order to generate a brick rather than tet10 mesh.
The customer defaults are kept in a *.dpv file. You can customise your defaults then export the *.dpv file allowing multiple users to have the same set-up.
