Great advice everyone. My main hesitation with volunteering was, as most said, selling short my true capability to a profit-making company. I think I'll look more into "non-profit" engineering societies and try to offer up what I can.

With this aggressive interviewing strategy in mind, I would approach it in a diplomatic manner without getting to defensive but also maintaining confidence. I'm sure they don't mean it personally but rather just want to see if you can overlook the emotional aspect...

I disagree with this type of interviewing (particularly in engineering), but fact of the matter is that it is advantageous to the employer to see who will "keep their cool", and who will break under the pressure.
Just to clarify my previous post, I think professional photos are okay as long as you are in a position to be physically recognized, which is not my case.
For the record, I'd never submit a "glamour-shot" photo of myself or post anything of the sort in an online portfolio...I'm not hideous by any means, but spending time looking good for the camera are something that should be omitted from an engineering portfolio, in my opinion. By the same...
