If you do choose to be safe, why not expand the spec if its only in there "just in case". Remember someone will be testing on the job (more time/$) and it would be silly to reject concrete or slow down the contractor (reject/addition of AE, test, ect.) if the air is slightly higher or lower than...
good ideas above... definitely use silica fume and instead/in addition of chilling aggregates get some hydration stabilizer like Delvo to delay strength curve a bit
beware...iron oxide can ruin Architectural concrete finishes with staining effects and are not usually noticed until after placement

Ron is spot on.... "Consider wind breaks and surface fogging during the finish operation" At the very least properly applied evaporation retardant should be used. With those temperatures it should be specified to the contractor he has to be prepared with some method. Some cements are slower...

Many good posts in reply to your "problem" in this thread. Hope you take the advise of many of us who have been there and done that. Work together with your co-workers and soon they will value your opinions when they realize you value theirs as well.
Nothing wrong with seeing what the "market" rate is for your position. Your employers deserves fair treatment as well. If you like your current employer and feel you are under compensated for the work you do.. sit down with them and discuss. Sometimes one party or the other is being unrealistic...
Agree with Ron but you can have water on the surface before finishing as long as you let it evaporate before finishing takes place. This is common in severe situations where rate of evaporation is greater than the concrete bleed rate (Silica Fume mixes come to mind)and fogging is required. What...
@chipper
Order a better performing mix from the producer and make sure you have a quality contractor doing the work. Mix designs can be easily tailored to get the results you want. You get what you pay for... don't cut costs where you shouldn't and cross your fingers.
