A question about corrugated plate interceptor operation

Dear all,

I am having a hard time understanding the operation of corrugated plate interceptor (CPI). In our plant, we have a CPI unit designed and built by Monarch Separators, Inc. What I am not understanding is how exactly the water and oil flows inside the CPI unit (the flow patterns). The P&ID and manuals supplied by the vendor is not of much help here. And the other question is about operating the unit. Typically the amount of oily waste water going to the CPI is fluctuating through the day, i.e., there is no constant flow to the CPI and as I understand the oil gets skimmed only when it reaches and exceeds to the oil weir level, so during periods of increased load on the CPI, the water level increases so much that clean water can also escape to the oil chamber. How does the CPI prevent this from occurring? I have attached the P&ID drawing for our CPI unit to illustrate what am I talking about. Thank you in advance.
