Adding analogue controller and variable load option

Im currently constructing a project with AC to DC 4 quadrant motor operation and im having trouble adding a variable load option as well as an analogue controller. The main aim is to have a means of varying the speed of the motor as well as monitor it to achieve specific variable speeds.
Any input would be appreciated.

To control the load you have to be able to measure it, or measure some parameter analogous to the load. What are you measuring?
