I have created a part family in NX 11 and have multiple expressions defining the size of the part which I have populated with multiple rows of dimensions for the entire family of parts. I have also created two more expressions which I have linked to components of "Body Measurements", specifically weight and area. I cannot add these two expressions to the spreadsheet columns because they do not show up available columns list, but I do want that information added to the tabular note that I have added to the drawing. Is there a way to achieve this? I don't want to have to open each family member and manually record the values.

The part family creation / Update is actually applying the values for each individual member and then saves it. So Mass and Area should be updated accordingly (when update on Save is activated).
Weight and Area are two attributes which should be available in the selection for the PF spreadsheet. (MassPropMass and MassPropArea)

But even if this is happening automatically, you will never get it automatically to the drawing without opening it. Partfamilies are not updating or creating drawings when they are master model (don't know how you are handling your drawings)
The Update for the Tabular note can only be achieved with opening it. Or you have to create some code which will do this for you without opening the NX UI

I did some testing in NX12. Although it is not reflected in the PF Spreadsheet the attribute values are changed in the properties of the members.
I would also have expected that these values would show up in the spreadsheet after updating or creating a member.
Maybe worth a call to GTAC
