Can someone tell me the stainless type used on some of the current appliances and, perhaps, the finish spec commonly used?

What might also be used is one of the newer lean duplex stainless steels such as LDX 2101. Has nearly twice the strength of 304 and is refrigerator-magnet friendly.
 
Can we agree that the more expensive parts use 304,while others use 201/202 or 430 in extreme cases?

Today I got a lot of scrap material from a reputed manufacturer of furnace parts as 304 and I was shocked to find a mixup with 202!!

My guess is that most users only know 'magnetic' vs 'non-magnetic' and they don't realize the differences in austenitic alloys.
There has always been a lot of 430 used for this, though 304 has also been very common.
