I'm looking into exhaust system for a smokehouse we are installing. Does anyone know what section of IMC (International Mechanical Code) would be most applicable for a non-gas powered (i.e. electric) smokehouse? I'm guessing something under commercial kitchen equipment, but I don't know if I need to investigate the output temperature or other characteristics of the exhaust from this system before I proceed any further. Thanks in advance!

I think the IMC is written based on the cooking equipment they'll be using. Just compile a list of the equipment they're using and then compare with the definitions of chapter 2 of the IMC for light, medium, heavy, and heavy-duty kitchen equipment. Then you can start designing your system based on chapter 5.
 
I'd say that a smokehouse does not meet the IMC's definition of a "building", and thus IMC does not apply.
 
Oop, to clarify the smokehouse (i.e. a Mauting smoker unit in my case) is a piece of equipment. Not a building containing smoking apparatuses. The unit takes in steam, DCW and DHW, electricity compressed air and outputs some sort of exhaust (inquired the manufacturer to get more details on the exhaust specifics) and drains to SS.
 
Oh, gotcha. The only thing I can see is Section 917 that says it needs to be UL 197 listed and meet manufacturer instructions. I'm sure Mauting can tell you exactly what you need.
