We have been asked to remove the year call-out out of our drawings. Example: 1. APPLICABLE STANDARDS/SPECIFICATIONS:
ASME Y14.5M-2004, DIMENSIONS AND TOLERANCES
INTERPRET DRAWING PER ASME Y14.100M
ASME Y14.38, ABBREVIATIONS
Is their anything written that we place or not place the year?

Well, given that different years/editions can mean differences in interpretation of the drawing due to changes in the standard I'd say it would be a mistake to remove the year - at least for the really significant standards like 14.5.

If you you have 14.5-1994 take a look at section 1.1.3 it tells you exactly how to call it out on drawings. I'd suspect other standards have similar.

(By the way, 2004 edition of 14.5?)
