Which automotive manufactures are involved in the assembly of completely knock down(kits) in the marketplace i.e. outside of their own country of residence

You want to narrow that down a bit. There are literally dozens of mfgrs doing kits. From the UK, South Africa, US, and undoubtedly many others. Everything from Luxury tourers to race cars, Porsche 356 replicas, GT-40's, all sort of Lotus clones, Model A Fords, SS Jags, Mercedes, Bugatti's and, of course the various forms if Shelby Cobra replicas, ad infinitum!
The web is the place to get an answer much more in depth than I can give here unless you get down to specifics.

In which Luke teaches Obi Ben a thing or two...

CKD (complete knock down) is an industry term for building a kit of a car that is in production, exporting it, and then assembling it elsewhere.

For instance when I was at LandRover we built CKD kits for Africa, and probably Australia.

As to who still does it - I don't know. It's not very efficient since you are typically carrying a lot of tarriff on the parts, and assembly labour in the destination country only represents a saving of 10% or so on the cost of the car.

Quality control is obviously a big issue.

I thought I felt a disruption in the Force. ;-)
Seriously, we used to do the same thing on Glass bottle machinery, the reason being to skirt the import tarriff, as well as to get our goods in at least 1 country ( I forget which ) that made it difficult to get goods not made in their country in.

I was influenced by the 'dark side of the force'.
