Bolt threads.

I've created an M12 bolt in solid edge but am having trouble with the thread.

I wish it to have a pitch of 1.75mm but this isn't one of the drop down options.

Is there a way of adding a custom pitch?

M12 without a pitch is that thread you're looking for. It's
metric coarse und to distinguish it from metric fine the pitch
is left from the description. Metric fine will show the pitch
thus
M12 --> metric coarse, standard pitch 1.75

M12 x 1,5 --> Metric fine
(other possible pitch: 0.5, 0.75, 1, 1.25)

ISO and DIN does not require to always show the pitch but IIRC
ASME does require it. This mmight lead to some confusion when
sending out a blue print to someone not familiar with that
standard: "where the hell can we get a tap M12 x 1.75", never
heard of this" ;-)

here is line within holes.txt already changed:

12; 10.106; 9.853; M12 x 1.75; Mx1.75

You can simple add this line, so to have both options with and
without pitch

Not a solid edge thing but we add a note when using metric threads that "Metric thread callouts without a pitch sprecified are course pitch." Doesn't always eliminate the confusion but helps a bit.
