Hi,

I'm looking for any official book or documentation that lists corrosion rates of various metals with various services.

For example Carbon Steel in saltwater, ammonia, sulphuric acid.

Are there any standards with such data or are these only obtained from in-service measurements?

There are dozens of such books, some for specific applications and some with more general information.
There is the ASM Handbooks, the Compass Corrosion Guides, the data published by Outokumpu, the Material Selector series from MTI, and those are ones that I can see from my desk.
Identify specific service environments and then look for references.
You also need some test books, because in order to use the data you need to understand what is causing the corrosion (the underlying mechanism) so that you don't misapply the information.

I swear by the ASM Handbook of Corrosion Data, which is an excellent compilation.
