I am trying to calibrate a SEEPW model with pore water pressures obtained in the field every hour for one year at three points in the slope. When I want to compare the field data with the model data, I am using the graph option, but it only plots the data saved at the specified time steps. Is there a way to have data at a node (similar to observation nodes in other software) where I can have pore water pressure at every hour for 3 desired nodes, without having to save data for all nodes every hour, which is not feasible?

As I understand your question, you want to tell seep/w to solve only specific timesteps but want to chart a lot of timesteps in-between without having seep/w solving the problem. From my knowledge it can only chart what it solves. Look at your input boundary conditions and rain model then pick out your timesteps you want to solve, then take the graph into excel and fit trendlines this could save you some analysis time.
