I found this... Cement Tank Linings work very well in pressure vessels such as DHW-DCW tanks. PH is really your only concern with other applications.
NSF-61 certification is required for potable water applications, however there are not too many cement based coatings on the market that conform with NSF-61. Raw materials found in many cement mixes are often contaminated and not suitable for human consumption.
NOTE: Portland cement, mixed with sand is not considered NSF-61 certified since you cannot mix a non-certified ingredient or additive to an NSF-61 certified product without voiding the original certification.
You will need to find the correct cement lining product for your storage tank on either the CSA or NSF websites.
