I am trying, successfully, to plot one result variable as a function of another, but the X-axis label doesn't change, so the plot always appears to be plotting the dependent variable as a function of "TIME". The ANSYS guide is silent (or at least obscure) on how to fix this. Any ideas?

Look up the Help file on using /AXLAB. It changes the axis so that if you type /AXLAB,X,Strain the x axis will be labelled strain.

Thanks. I'd found it, no particular thanks to the Help for the "Variable Viewer". The "X-Axis" selection button in the Time History Variables dialog box (accessed through the "Variable Viewer" in the Main Menu ) replaces Time/Step/Substep as the x-axis variable with the selected variable but doesn't change the axis label to match. Not what I would expect, but that's to be expected from the 7th major version change of a high-end software package nowadays.
