When doing a hydro test, what are the advantages of using a chart recorder versus calibrated pressure guages? Typically test guages are used, however, sometimes the chart recorder replaces the test guages or is used in conjunction with the test guages. Why?

Right...Most codes or company standards require a record of the pressure and sometimes temperature during the hydrotest. The calibrated pressure gauge is used in conjunction with the chart recorder. You should never see a chart recorder used without somesort of gauge.
 
Just remember that all instrumentation has to be calibrate within the time frame specified by code of construction. This especially true of the pressure sensor used for the input to the recorder.
