when I enter a sketch, I have some geometry that is in the way. Is there a way that I can clip the model to the sketch plane? I remember there was a way to do it but I can't find it now.

No. I need to see the part.
Imagine I have a enclosed box, I need to sketch on one of the inside faces. When I create a sketch on that face, I cannot see anything because the outside of the box is in the way.
I know there are workarounds for the exact scenario i'm using here, but I need to know how to actually do it the correct way, as i'm not actually using a box. I know there is a way to do it I used to do it all the time I just can't remember the tool name.
 
If you are in "Sketch Task Environment" the you can use Section to clip to the sketch plane.

Should be there in NX11. Try using the command finder. It will let you add it to your toolbar
