I'm playing with a thin-walled cylindrical pressure vessel in COSMOSWorks, and I was wondering if there was a way to measure hoop stress (aside from calculating it theoretically). Any ideas?

You need to measure the stress in cylindrical coordinates. Insert a reference axis coincident with you cylinder axis and then when defining the stress plot you can select this reference axis and the X-stress will be radial, Y-stress will be cylindrical and Z-stress will be axial.
