Creating a plane through points

What is the best method to create a plane that is a best fit through a number of points.
Currently, I am using the Surface from Point Cloud feature and specifying a U and V degree of 1. Then I place a plane on this surface. However, the Surface from Point Cloud is limited because you cannot edit the paramters after creation. I'm not sure if it is associative either.

Under the place function there are pull down menus one of which is for curves and points, but if you just pick the three points then it will create a plane intuitively.

As you may know any three points will create a plane, for more than three it is possible for some to be off the plane. Your cloud of points method would be as good a method as any, provided that you set the U and V degree and patches both to 1 then it will generate a planar face.
