I wish to create a table in a sheet view that will list co-ordinates for the benefit of our outside machine shop.

Is there a way that I can get Pro/E 2001 to generate a series of co-ordinates that represent a 2D profile starting from a given point ??

There's a great tool called a Hole Table (under the Advanced menu option) in the Drawing Mode that allows you to automatically extract X and Y coordinates from hole features, axes and points in your model. You need to select a coordinate system in the 2-D view you wish to generate the coordinates for. If your profile/curve doesn't contain any datum points, create them first using the available options, then place the view on a drawing and follow the steps to create the table.
