A customer has asked if I can cut solid zinc sheet, between 0.030-0.060" thick. I have done zinc coated pieces before, but...can I even cut this on my CO2 laser? What problems am I going to run into?

In short, it can be done. You are going to want to use N2 assist gas and go negative on the focal point to start off. I'd start with .080 aluminum factory conditions and go from there.

Get an MSDS sheet and be careful with the fumes. Do a Google search on zinc fumes. This has been a known problem for welders for years.
