Demand load for a bakery

For a bakery with 6 ovens with a total demand of 170 kVA can Table 220.56 NEC be used and factored this load by 65%?

Yes, but see the last paragraph in 220.56. You have to size the feeder for at least the sum of the two largest appliances. So if there are two real big ovens and 4 real small ones, the 65% might not be greater than the sum of the largest two.

Also, the 65% demand means that the connected load is multiplied by .65. The load is not reduced by 65%.
