Hello,
I need to be able to draw a the curvature of this peice in cad (2D) so i can get wooden cut out from a cnc machine that matches its curvature. THen a bunch of the wooden peices are put together to make a mould. My issue is I have no idea how to accurately measure the curvature, any tips would be appreciated. Please not its not a perfect arch so cannot jist find centre height. For now I am only concerned about the outside edges, will worry about the more complex window section later

If it's not a perfect arc (I'm willing to bet it's elliptical, though!), then you're only real choice is to make multiple measurements along an axis and do some curve fitting... it will never be a perfect match, but beyond a certain level of accuracy, it won't matter. Measurement can be either by hand or by machine (either physical contact or non-contact/3D-imaging).
