edible oil neutralization temperature

Dear all

I have seen that caustic soda react and convert oil to soap, also in edible oil production line caustic soda is used to convert the free fatty acid to soap. My question is how do we control the lye used only attack the free fatty acid not the oil (if it is based on temperature then please tell me at what temperature lye react with free fatty acid and oil)
