does any one know, some rough standard values (obviously they are different for each car) but of the pressure or velocity of the exhaust gas entering the manifold, also, the temperature, chemical composition, and turbulence values??

If you know the mileage of the car, you can estimate it from the composition of gasoline and an estimate of the excess air or O2 in the combustion. For velocity you would also need the temperature, otherwise you get mass flow only. The most recent T I saw was up to 1275F (for a race car).
