food mixer connections

i have sent off a 7.5 KW motor for refurb with leads labelled UVWXYZ, U.K, its come back with labels gone, whats the safest way to ident these leads??it powers a food mixer, slow speed(star connection), time, fast speed(delta) stop.

I'd wring their necks. I'd be on the phone until they fixed the issue.
