I am involved in a gas natural sludge catcher design for a plant that will handle 100 MMSCFD with a 10 bbl/MMSCFD of water content. How can I estimate the sludge catcher size and the composition of the water removed?

You'll need to calculate flow regime (Baker) and hold up of liquids (lockhart, Beggs-Brill). These will tell you if you have slug flow. Then with a pipeline profile (elevation change) you can see the size of the slug (or just make some experienced based guess).
As for whats in the water, just do a flash at conditions at the end point. You may need an extended gas analysis if you are looking for the distribution of HAP, VOC, and BETX.
Is it a "slug" catcher you are working on? The composition of the "water" depends on the quantity of Rich MEG returned, condensate phase, H2S, solubles and suspended solids, etc...As for sizing the slug catcher, you need to know the size of the slugs in the incoming pipe.
