Gear Pump Shear Rate

I need to calculate average shear rate in a gear pump containing two 50.35 mm diameter gears. Pump rpm is 250 rpm, clearance between each gear tip (12 per gear) and the case is 0.3 mm.

Is the open area (void) between each gear tooth used in calculating shear rate (I know this determines flow) or is liquid in this region assumed to be simply transported through the pump? Otherwise is the shear rate determined by the annular gap between the gear tips and pump case?

I am trying to determine a shear history for a liquid circulating through the system in a lab test which will run for several weeks.
