we are making valve disk & nozzle by stainless steel 316 and also hard faced the seat with stellite #6/6B.
Is it possibe to make same kind of disk & nozzle by martensitic ss 410, hard faced with stellite #6/6B.

Assuming you are applying the stellite hardface using welding, 410 stainless may present some challenges. Careful pre/post weld heating can be critical to prevent cracking. If slightly lower mechanical properties than those of 410 are acceptable then you might consider 410S, which has lower carbon content and is less prone to weld cracking.
 
Is it possible to weld 410 stainless steel with 316 ss followed by welding with stellite #6/6B. That means on the bottom (base metal) 410 ss welded with 316 ss then weld (hardface) with stellite #6/6B.

Yes. I would suggest you use an initial layer of Inco 82 or 182 deposited on the 410 followed by Stellite #6. We have done this for years on valve seat re-builds.
 
As metengr said, u can also try with initial layer with 309L
