how do I change the default material?

Every part I build, has aluminium as default. How do I change the default to, say, some kind of plastic? Do I have to change the template?

I do believe so. You, obviously, can change it within the part file itself, but if you want the change to be global (forward only), you'll have to change the template(s).

thanks, so how do I do that? How do I change the material in a part with nothing on it (so as to make it into a template)?

Start a new part, change the material, and save it as a new template.
 
Open the template (change files of type to template) and in the feature manager, RMB on materials->edit material. Edit accordingly and save.

The materials available in the "edit" of the feature manager aren't the same mat's as in the photoworks material library. Is that because the default mat. in the feature manager is more specific in terms of mat. properties such as calculating weight, density, etc.? As opposed to the photoworks materials, which are only for presentation purposes?

It seems obvious, but I have a variety of template parts in various materials and shapes, such as delrin rod, aluminum plate, steel box, etc.,
These can also be customer/project specific templates for parts, assemblies, or drawings.
