What is the easiest/best way to change a line's appearance from solid to dashed for example? I know about layers but is there a faster better way??

Go to modify pull down menu and select properties; a box will appear; then pick the line that you want to change and the box will list the properties of that line. Under linetype select the appropriate dash line. Now if that dash line is not present in that box you will need to load it thru layer; once the line has been changed you can match properties with other lines.
 
A much simpler way is to highlight the line and then select the linetype from the object property toolbar.

Yyes you can change the linetype of an element, you can change it's color as well. However, if you plan on using that file as an XREF in some other file, you can no longer control the color and linetype of those elements by using the layer commands. In our shop, we avoid changing the enetity properties to anything other than bylayer.
 
I agree with CADaver....
We try to avoid the forced chaged via the "prop toolbars".
Bylayer is the way to go IF xref'ng

as always there are many ways, if you dont know one of them why are using cad?!!
but seriously, if you are using a fairly recent release selecting the line and using the linetype pul down (on object properties toolbar) you can then assign a chosen linetype:
just remember to ensure you have the correct LTSCALE so its displayed at plotting..
 
You can also use the MATCHPROP command. This allows you to match the properties to that of one line which has the properties (colour, dashed, lineweight etc) that you want. This is useful if you have one line with the properties and want to switch several others to the same properties.

I use this for example to switch from proposed to existing when making the record of construction drawings.
