need help with video capture computer

Hi everyone,
I am designing/building a computer that will be used for data aquisition and experiment control. Some of that data will include a live video stream from a standard video camera (with outputs such as composite video and s-video). A second video stream will come from a thermal camera (not yet sure of the output here, possibly IEEE 1394). My computer has the ASUS P5GD2 Motherboard and a Pentium 4 Hypertheaded processor. The motherboard has a few firewire ports built in. I also have a Western Digital 120GB Hard drive which will be used to store the video. The two streams need to be recorded in real time and have teh ability to start and stop simultaneously to avoid synchronization problems with other parts of the experiment. I need help on choosing the right video capture cards (or similar devices) as well as the right software. Any input is greatly appreciated. Thanks.
