noodles drying

I'm working in a design of a drying line of noodles. The major problem is to have some ideas of wich are the optium parameters of temperature an humidity. The problem is have a to fast drying curve, but there is necesary to have a great delta of temperature. Someone know wich is the optium parameters for a good transfer of heat and have a mass transfer stabilization. Thanks?

It seems to me that you want a low humidity, high temperature environment. The time that the noodles spend in this environment if the parameter to minimize and the temperature of the outside of each noodle is a parameter to limit (so they do not burn). You will not find data readily available because this is proprietary information for your competitors. The variations from batch to batch of noodles will also affect your selection of environmental parameters.<br>

Control of humidity is expensive. So is prolonged exposure of the noodles to an elevated temperature. I beleive that there would be an advantage to allowing the noodles to dry under conditions that do not require de-humidification facilities - if possible. Vacuum processes may be less expensive than air de-humidification.<br>

The major problem with low humidity seems to be the posible fisures that could appear in the noodles. This efect is know as 'arsuado'(i don't know it's english trans.)<br>
