Is PEEK a good material for making a spring with? I need the properties of PEEK, but would like it in a coiled spring.

A good source of information on the design of springs (including plastic springs) is: M.F. Ashby, "Materials in Mechanical Design," Butterworth-Heinemann (Oxford, 1996).
 
Try a continious carbon fiber reinforced PEEK material. The carbon will provide stiffness and the PEEK provides the temperature/solvent resistance. See americanmatrixcorp.com for a supplier/molder of this type material.
