In mass concrete placing, it's more advantage to reduce initial temperature as practically low as possible.Particularly for massive structure, it's necessary that you concern about the stress induced from heated generatation (by numerical analysis). The simple and conservative way is to look into adiabatic heat generation curve of using cement and then use factor safety = 2.0 to control your cement content in mix proportion.
