Are there any polymer fastenings standards available? For steel you can use ASTM A193 or 194 or A307 but I can't find any equivalent for bolts and nuts made from polymers such as nylon etc.

I am not aware of any product-specific standards for polymeric fasteners. You will need to specify a materials standard and then use testing and calculation data to specify fastener-specific values like proof stress, resistance to head misalignment, etc.
