Are there any example problems of prestressed concrete slab design? I was thinking of addressing the subject like we do with retaining walls, i.e. addressing it by increments of 1 ft, but then I was wondering how do we prestress on the x and y direction of the slab as opposed to only one direction like we design prestressed beams.

Prestressed concrete takes on two primary forms: pre-tensioned and post-tensioned. I assume you are referring to post-tensioned concrete, where several textbooks on prestressed concrete have design examples. Check out Bondy and Allred on PT Concrete Design, assuming you are in North America.
