I inherited a database of AutoCAd files, some files were easy to convert to pdf using pdf plotter with color dependent plot style, some files would not let me do conversion; I'm only getting colored pdf not in black and white. How do I go about fixing this problem, can someone help me?

Not sure what software you are using for the convert - but most have a setting that converts all colors to black/white. As a matter of fact, I think you can do that in Auto Cad.

I'm doing the conversion in AutoCAD using color dependent plot style but for some reason I'm not able to with certain files.

We've run into that before as well, and for some reason, those files were set different. Same drawing set, same client.

Some used ctb files, some used stb files. That'd be the the first thing I'd check on the files that didn't work.

If that is it, on those files, (depending on your acad version) convertpstyles and convertctb might be what you need, but test it out first.

If I remember correctly, it only goes one direction (someone please correct me if that is wrong...)

Incorporate CutePDF writer into your ACAD plotter configuration. CutePDF writer can be downloaded free. When you are ready to print and select this program for a plotter, it will save the plot as a PDF file.
