Is it Correct to calculate six sigma parameters in process that are controled by a PLC.
Example i use an Oven where i steriliza ampoules, i read with dataloggers the temperature inside oven´s chamber.
Must i calculate the Cp, Cpk and others measures of capability process?

Only if you want to keep it "in control".....

Remember, you must ensure that the reading are valid. A major problem I see is that people blindly believe anything with a digital readout. Just because it reports 156º, that doesn't mean it is!
 
Do a gage r and r before you start any great datalogging exercise.
