I'm pulling some customer part files off their server and they come in as Catia V5 files. I am able to open up product files(Assembly) and save them off as a step so that I can open them within Solidworks 2020. However, you don't get the same file format options when saving off only a part file, which is something we typically get from the customer. Is there an easy way to save a Catia part file to a step so that it can be opened within Solidworks? I have both Catia V5 and Solidworks 2020 on my PC.

Check these 2 areas and make sure you have a ST1 license available.

Definitely do not have the ST1 license. Odd how I can do it with assembly files, but not part files though.

Without the STP(ST1) license, a product will only be the tree structure, no geometry. Are you sure you scrolled down the shareable license list and looked for it? You have to tick it on. Same thing on the license tab where you select the main bundles, you might see something like HD2 + ST1 and what ever else your customer has.

OH yeah, I checked. Thought I attached a picture but I guess not. The option is completely greyed out so I can't even tick it. I already reached out to my IT dept to see if they can work with our CATIA reseller. I wanted to start here because our IT dept is swamped and wanted to exhaust all other options first.

If your not actually modifying anything in CATIA, there are probably much cheaper options just to convert the format.

Also, try the batch converter. It's under tools >> Utility

Batch is a good idea. I get these 2 errors when I open the batch management add-in. Could this be a user error or license error?

I've never actually used it, I just know its there. Those look like no license issues.

Well, error message states what you have to do pretty clearly. That's not a license error.
