I am looking for a text book that contains information about power cable for electrical submersible pumps for oil wells. I am new to this industry and want to research as much as possible on the subject.

This is a very specialized type of cable. I doubt very much you will find a text book on this subject. You would probably be better to consult manufacturers.

Also, you might try IEEE Std 1018-1985, IEEE recommended practice for specifying electric submersible pump cable - ethylene-propylene rubber insulation
