QUENCH TANK PROBLEM

I am trying to optimize a quench tank for large steel castings (hardnesses aren't uniform throughout batches). Because the flow is randomly directed, we had some spherical copper probes made with heaters and thermocouples inside to get a better idea of the different flow rates throughout the tank. The probes reach a lower temperature with bettter agitation. I tried calculating the cooling rate with some basic fluid and heat transfer equations but I could never get realistic numbers. Does anyone have any suggestions on a simple and easy method of finding a fluid velocity without having to look through graph after graph?
