Hi..

I am studying a process of fermentation of sugar cane juice. I have been facing a hard barrier to find out a paper or literature about yeast gowth in this kind of process.

My real target is to understand the production ratio to calculate Kg dry yeast produced per liter de alcohol in a batch of production. The ideal is to know how much yeast is usual produced during a alcoholic fermentation. After that to evaluate the economic balance of sugar usage for each product (yeast and ethanol).

Please, if somebody knows some paper where there is some theoretical approach of this topic, I will appreciate to receive your help.

I do not think there are such numbers. Specifically, fermenation processes are depending on a large number of parameters. Moreover, this dependance is not linear, nor has a coherent allure. Therefore, the only literature that could help is, in my opinion, some research work. Try finding University doctorate works in that domain.
 
If I understood correctly, you are looking for a mass balance on the fermentation operation. The ideal way to do this is to consider the something like this.

Ethanol + Oxygen + Nitrogen sources ----> Yeast + CO2 + other gases + Other products

Now to perform this, monitor the total ethanol consumption. Once you finish the fermentation determine the biomass of the weight and also perform an assay for residual Ethanol on the sample (broth). This will help you to determine the total consumed ethanol. Now you will have rough idea of the total yeast produced / ethanol consumed.
