We area a consulting firm here in the East Coast and I am assigned to do a multi-use commercial project which includes hotels, retail and parking garage.
Unfortunately the retail side will have a restaurant in the future and one of the client requirement is to have a refrigerated trash room. This space will probably serve two restaurants in the future but will be built as part of the shell building construction. It would have been easy to deal with if we have a food service consultant on board since they usually will provide a prepackage room similar to a walk-in cooler. But as we all know in the consulting business nothing is easy.
So, has anyone have done a design for refrigerated trash room? What institution has the design guide? I would imagine I will need to maintain 40-50F DB and 30RH to minimize odor and decay. Any exhaust requirement?
