Refrigeration Pit Vacuum

I was just given some record plumbing drawings of a grocery store we will soon be renovating. There is a central vacuum system that feeds underground and hits each refrigeration pit. I'm not sure what the system is for. Typically, I see hub drains in the bottom of the pits. No information was given about the pumps, so I can't try and work backwards.

I'll be out on sight next week to see for myself, but I'd like to be able to educate myself a little before I make the trip. Anyone know the system's purpose?

It sounds like the installation of drain pipes to carry away condensation from the cases, coolers and freezers to a common pit with a sump pump
