Regulation of energy

I need to regulate the energy produced by photovoltaic panels but not convert the voltage.

The DC voltage data are:

Vco = 315 v

How I can do?

If I understand correctly what it is you want to do... and that is not selling extra electricity into the grid,

Solar energy is produced according to area of cells, efficiency and incident light. Regulation might be accomplished in a classical manner by, for example, orienting the cells away from the incoming light, or directly shading the cells, but that produces other costs and troubles, so

I think this would be most easily done in these cases, not by regulation, but by diverting whatever extra power is produced to an artificial load, such as heating water, or a room air heater, running a vent fan blowing into open air, or pumping water into some kind of a reservoir. Water stored in a high reservoir could be used in turn through a hydroturbine to generate electricity at night... for example. An artificial load using heat is pretty simple, as not worries are created when only a little extra power is available so you don't have to worry about low rpm on a fan motor, or pump in those cases.

Find the swtich on the heater. Flip it from ON to OFF.
Or,
Monitor the voltage from the cells. When that sees a high value, set it to trigger a relay and turn on the water heater and turn off when it goes low again.
