requirments for commercial cooking equipment for fire supression equip

I need to know what are the requirments for resturants for their cooking venthoods.
 
Try the NFPA at I don't recall the exact section that applies to kitchen hoods, but it should be in the index.
 
Suggestion: There are publications dealing with commercial kitchen requirements. The requirements vary depending on the size of commercial kitchen, e.g. 200, 400, 600, 1200, etc. seats. Visit
